3 Veggies You Can Regrow on Your Windowsill

I don’t know about you, but I hate to throw anything away. I always feel like if I do not use the whole vegetable in my recipes that I should find something to do with the leftovers. Sometimes I give it to my pets, sometimes it ends up in the compost pile, but sometimes, just sometimes, you can actually regrow it! Here are three veggies that you can grow again and again, right there on your windowsill:

 

  1. Green Onions (Scallions) – Most of us chop off the green part of the green onions and toss the white part. However if you save the white part, roots and all, and set them in a cup of water in your windowsill they will grow a new green onion for you? In fact they grow so quickly that I have to keep cutting them back and storing the extra in the fridge! Green onion is a great milder substitute for regular onion in recipes and makes a tasty topping for baked potatoes. I have found that tummies that get upset ingesting onions do not have the same issues with green onions, so this one is a definite keeper.
  2. Romaine Lettuce – Romaine lettuce is expensive! I usually buy the hearts and find myself wishing I had the room to grow my own lettuce. Well, I do! All you need to do is save the base of the lettuce and stick it in a cup of water on your windowsill. After a few days you will have a whole new head of fresh, pesticide free and tender lettuce!
  3. Celery –Last but not least is celery. We all remember coloring celery with food coloring and water as kids, but did you know that you can regrow celery just with the base? Take the whole base of the celery and place it in a container of water in your windowsill. It will grow slowly, but give it some time. If you want a sturdy celery plant like the one you bought from the store you will have to move it into dirt eventually, but if you just like the flavor of celery you can use the little leaves and stems that pop up on water alone.

 

Why keep buying these veggies form the store if you can grow them so easily? I love to watch food growing right before my eyes and children also love to see their ‘crops’ grow. Remember to change out the water every couple of days to prevent it from rotting or stinking and you will have tasty veggies all year long!
