Ingredients
  • 1 sweet potato chopped and peeled
  • 8 baby carrots ( 1 medium carrot will also do the trick) chopped and peeled )
  • 2 White potatoes chopped
  • ⅓ cup almond milk ( or any other non- dairy beverage )
  • 1 teaspoon dry chives
  • 1 teaspoon rosemary freshly chopped
  • Salt to taste
  • ½ teaspoon black pepper

 

Directions

Get all the ingredients ready and prepared before you start the cooking process. Take all the root vegetables, potato, sweet potato and the carrots, in a single pot and pour in water so that it covers all the vegetables. Cover the pot with lid and boil the vegetables in medium to low flame until it is properly cooked. It would be so soft that the veggies are mashable with the fork. It will take almost 15 to 20 minutes for the vegetables to be perfectly tender and boiled. Once that is done, turn the stove off and drain the water.

Take the vegetables in a separate pot and start mashing them till they are fine. Try not to keep any hard lumps in the mix as that will not taste as even and smooth. Once you have a smooth mash, add in the almond milk, or any other nondairy product that you prefer, followed by the freshly chopped rosemary, chives, salt and black pepper. Give all the ingredient a good mix. You can use any hand mixer for this recipe or even use a fork and spoon whichever you feel convenient.
